Combine worcestershire sauce, soy sauce, garlic, and red wine in a mixing bowl. After two hours, remove the foil and place back in the oven for a further hour, or until your meat thermometer inserted into the thickest part of the leg registers 65 degrees (the turkey will cook on while resting). Cooking low and slow will give you a very juicy evenly cooked roast. Brush with olive oil and season with salt and pepper. Oops! i forgot to mention, the butcher at wholefoods seasoned the meat already. No money from the licence fee was used to create this website.

Please log in or create a free account. For a salt crust use about two or three pounds of sea salt to cover it all, then after cooking, smack it with a mallet and release the crust- it will not taste over salted despite its appearance. Gosh chris, if i where you i would re-think my method.
